  1. Love this video Sahil! Your fresh oyster mushrooms are just gorgeous! I actually use this kind of a mushroom recipe on top of bitter greens as a warm mushroom salad. I grate a little fresh Parmesan on the top as well with a quick squeeze of fresh lemon. Yum!

  4. For all the dairy-free people, I have tried all these recipes with the following non-dairy alternatives and they work great! For the caprese, use Miyokos mozz. For your pesto make it with nutritional yeast, ground cashews and garlic roasted in olive oil and a bit of salt to replace the parm. For butter, Miyokos cultured vegan butter is the best, but all the vegan butters are pretty good. For creamed spinach, you can use a cashew cream and nutritional yeast but, if you like jalapenos, you can just put some Siete brand queso blanco in your cooked spinach. For grated parmesan, use the violife parmesan triangle. For the paneer, use the violife feta or smoked gouda blocks. All these things can be bought at Whole Foods or online.
